Picnic Menu: Tapas!

For our third summer picnic, we loosely went with a theme of Spanish Tapas.  Of course, the variety of tapas are endless, but as we were throwing a weekday picnic, we went with the easy ones: Serrano Ham with Manchego, Chorizo, Marcona almonds, olives, fruit and our old standby: Gazpacho.  We also brought along a few other non-Spanish dishes like roast cauliflower, zucchini confit and tomato jam.  This particular picnic drew a crowd and people brought an amazing array of foods:  steamed artichokes, homemade guacamole, delicious chickpea salads, and more, reminding me of the story Stone Soup.  If your thinking about a picnic and don’t have time to cook: this is your theme.  Even better to invite a lot of people and have them bring the food!
